Chocolate Chip Protein Cookies

Makes 10 cookies

Ingredients:

  • ⅓ cup coconut flour
  • 1 scoop Vanilla Grass-Fed Whey Protein Isolate
  • 2 tbsp coconut sugar
  • ¼ tsp salt 
  • ⅓ cup coconut oil, melted
  • 2 tbsp maple syrup
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • ⅓ cup chocolate chips (or your favorite chocolate bar, chopped)

Instructions:

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

In a bowl, mix together the coconut flour, Vanilla Grass-Fed Whey Protein Isolate, coconut sugar and salt. Add the coconut oil, maple syrup, eggs and vanilla and mix to combine. Stir in the chocolate chips.

Allow the batter to sit for 15 minutes to firm up. Roll into small balls and place on the baking sheet. Use your hand to flatten each cookie. 

Bake for 14-16 minutes, or until lightly brown on the bottom.
